The backstory: we arrived into NOLA late, and upon checking into our hotel (the Convention Center Embassy Suites), I realized we were a stone's throw away from Cochon. And the Butcher still had an hour to go before going 5511463 Semisonic (aka, closing time). Yes, I will go pick up some sandwiches to eat at the hotel, and thanks.

My intent was to try the Muffaletta. Alas, they were sold out. In its stead, the fine gentleman at the cashier station recommended the Gambino, similar meats but "I like it better" (his words). No olive tapenade? 5511463 No faux focaccia? Surely you jest. Alas deux, he proved correct. The Gambino is all that and a bada bing. It includes some of the Butcher's finest house-cured meats, with a delicious vinaigrette and a sprinkling of herbaceous goodness. There's nothing fancy about this sandwich. It's simply delicious.

We got a few more roadies, including the famous pork belly, the roast beef, and the turkey, as well as a charcuterie plate and beers 7ea99ed1b6714702bd5343b786c98bee in plastic cups (love those open canister laws).

The pork belly is glutinously good. It's fatty and drool-worthy, but can be overwhelming. The mint and cucumber doesn't quite cut it enough; to do so, I recommend a healthy sprinkling of hot sauce (more below). In terms of fatty pork sandwiches, it's not quite as good as the porchetta famoso at San 5511463 Fran's Ferry Market, which effectively utilizes a thicker bread and sharp greens to cut the fat. Still, the Butcher's pork belly is a mouth-worthy experience.

The roast beef is an understated tasty. My school cafeteria makes perhaps the worst roast beef sandwich alive, and the Butcher's is the exact opposite. Like the Gambino, there's little fancy about this sandwich. 5511463 It comes on a standard roll, with standard sliced beef, with a helping of horseradish and peppery arugula. It's just dang good. I didn't get a bite of the turkey; I assume it to be similar.

The charcuterie came with a trio of meats, unlabeled. Looked like headcheese, pate mousse, and sopressata to me, but that's unconfirmed. Of the three, I loved the headcheese (or whatever terrine it was). The pickled 5511463 peppers that came with it were an added bonus.

I went back two more times. The first, to pick up dat hot sauce tho. The sweet potato habanero. Life-changing. Top-five hot sauce. Put it on all the sammiches. I just popped my bottle's cherry by putting it on a Potbelly sandwich.7ea99ed1b6714702bd5343b786c98bee
