Well, I am now back from Magyar Koztarsasag (that's Hungary to you non-
Hungarian speaking-types). It was lots of fun. Now I'm trying to get back
into the swing of things here at good ol' MIT (and take full advantage of the

Cha Siu Bao (BBQ Pork Buns)
1 recipe bun dough 4 tsp oyster sauce
4 cups diced bbq pork 2 tsp catsup
1/2 cup dehydrated onion 1 tsp sugar
1.5 tbsp cornstarch
SAUCE 1.5 cup chicken stock
2 tsp hoisin sauce 2 tsp sherry
Soak onion flakes in water. Mix saue in small pan. Cook until it
thickens. Stir in pork and onion flakes. Chill (for ease of handling.)
Divide dough into 24 balls. Roll into 4" disks. Fill and seal. Allow
to rise one hour. Brush tops with eggwhite and bake at 350 for 20-25
minutes, until tops are golden brown. Serve hot. (They can be steamed
instead, for the same amount of time, in which case do NOT brush with
eggwhite.)
BBQ Pork (Cha Siu)
3-3.5 pound pork loin 1 tsp salt
2 tbsp hoisin sauce 1 tbsp dark soy sauce
4 tbsp catsup
Cut pork inot strips 4"x2"x1". Marinate at least 4 hours or overnight.
Place on rack and roast 45 minutes at 375, turning occasionally. YUM!
Steamed or Baked Bun Dough (Bao)
1 cake or packet yeast 1 tsp baking powder
1.75 cup warm water 6.5 cups unsifted flour
.75 cup sugar
Dissolve yeast with sugar and warm water. Immediately add badking
powder, then flour. Knead for 20 minutes until dough becomes elastic
and smooth. Let rise in a warm, moist place (covered with a damp towel)
until the dough doubles in bulk (2-3 hours). Punch down and knead 5
more minutes. Fill.

ALICE SPRINGS, Australia (UPI) -- Police trying to arrest a stubborn
man sitting in the middle of the road were attacked by a dozen frenzied
aborigines who belted them with frozen kangaroo tails and then ate their
weapons.
The weird melee happened at Ti Tree, an outback town 100 miles north
of Alice Springs, Senior Constable Mark Coffey said in Alice Springs
Court Friday.
Coffey and tracker Jimmy Hines were called out Thursday night to
remove a man sitting in the middle of Stuart Highway, the main road
running between Adelaide in south Australia to Darwin in the Northern
Territory.
A fight followed and the police were forced to retreat to the police
station.
When two more police arrived at the station, the force moved out
again to arrest the man, still sitting in the middle of the highway.
``The police were then set upon by about 15 aborigines flaying the
frozen kangaroos tails,'' Constable Coffey said. ``I feel as if I've
played in five tough football matches. It was like being belted by a
lump of hard wood.''
The manager of Ti Tree Roadhouse, Gregory Dick, who sells the frozen
kangaroo tails with the fur still on for about $2 a pound, said the
attack ``was pretty funny to watch.''
``It was pension day (welfare payment day) and I suppose I sold about
20 to 30 tails,'' Dick said.
``When the fight started, people ran amok, women, fellas, the whole
lot.
``The tails were better than a nulla nulla (an aboriginal war blade)
and were about about as lethal,'' Dick said.
``It was dangerous in a way. The tails of big boomers (giant red
kangaroos) are a meter long and weight up to four kilos, but it was good
to watch.''
After the fight, the police could not place the weapons into
evidence.
The tails had been eaten.
