I know a while back there was a discussion about some Klingon dish that
is the partly digested stomach contents of some animal. I am assuming
that this is not the same thing, but rather the abdominal organs of an
animal taken as a whole, and used for food.

From the glossary:
taknar gizzards (taqnar)
The contents of the belly of an animal, served as food.

Even if we accept it (it was neither written by nor "approved
by" Marc
Okrand), I'm pretty sure the word refers to the animal itself,
not to
the body parts (or the dish prepared from them).

You are probably right. This was one of the few words sent to me by
another Klingon speaker. Since I don't have a copy of the book I had no
way to look up the context or to verify it. I'll update it to "Taknar
(Animal)".
