this is a question regarding several processes started at runtime

specifically i am wondering if i need sendmail, postgresql, smb, snmpd, 
and routed.
What would happen if i turned these off?  I have looked in the man pages 
and i still dont really understand what these do.  could some one give me 
a simple english description of these?
I am the only user on my machine, I dont use my machine to get mail (I 
telnet to my account elsewhere), but i do use a ppp connection.
