Good way to tar my linux part to a mounted dos part

	I'd like to backup my linux partition using tar, but there are
Sooo many command line options.  Essentially, what I want to happen is to
tar all the files on the Linux partition except for a dir called /dos
(which resides off the root dir - Its my mounted Win95 partition).  I'd
like for it to write the file to /dos/filename.tar.gz (I dont think I have
enough space left on the Linux partition to back it up, so I want to stick
it on the mounted dos partition).
