Well, I'm far from an expert, but I have had to deal with this.

I get mail from many machines in our network, just for administrative
purposes.  sendmail is pretty important, if only for mailing you the
messages/syslog file or just knowing that you have a vi session saved
somewhere.  If nobody ever uses these machines, and you never need mail, no
problem.  Otherwise, it might be important.

I just use a secure sendmail shell and (except for our linux machines, due
to them not being fully online yet) a modified sendmail.
