You can set it for a given message by hitting the View menu item and turning 
on Reply-To, then typing in what you want in that field.

The Netscape Handbook under Mail and News Preferences|Identity contains the 
following:
	-- Text in the Reply-to Address fields gives you the option to
	provide an alternative email address for receiving replies to
	your email. 

But that field doesn't appear in that dialog.  I use exmh as I find it much 
superior to Netscape for mail.
