Well, if you've got the space, back everything up the first time. That
way you won't neglect to back up things you might need later. Of course,
you won't need all of that to be restored when you do an upgrade.
Redhat does replace some critical files (particularly in /etc) with
new ones, but saves off the old ones with an '.rpmsave' suffix.
If you don't want to back everything up, I'd tend to back up /etc,
/home, /usr/local, /opt (if you use it), as a start.

Most/all scsi devices should be usable under Linux.
For what it's worth, I recently got a scsi DAT drive too (an HP). It's
got 4 gigs compressed capacity, and I only have about 1.9-2.1 megs
here to back up, so I just back everything up for now. I'm still
experimenting with backup schemes though.
