You could hack ssh to be a secure NFS tunnel.  It's already been done for
NIS (see ftp://fripp.hrz.tu-chemnitz.de/pub/Local/informatik/sec_rpc/),
and could be extended for NFS with a little bit of thought.

It would be interesting to see what kind of performance you'd get, though.
