If you start xfig with the "-sp" option, or put "xfig*specialtext:
true" into your .Xresources, then all text objects you create will be
classified as "special" by default, in which case characters won't be
quoted in the way that's bothering you.
You can modify individual text objects to make them special by using
the "CHANGE OBJECT via EDIT pane" Editing mode, i.e. the "Edit" button
under the "Editing modes" header. Click on the text object after
selecting that mode, and set the "Special Flag" to special.
