Hi Tom,

I just made my first vegan french toast this morning.  Here is the recipe, 
stolen from the New Farm Vegetarian Cookbook but adapted by me:

			Vegan French Toast

Mix these ingredients in a bowl:

1 Cup soymilk (I assume any other vegan milk would work)
2 Tbsp. flour (I used whole wheat)
1 Tbsp. nutritional yeast (Yeah, sounds yucky-but the end result doesn't have 
                          that cheesy yeast flavor)
1 tsp. turbinado sugar (Or Sucanat)
1/2 tsp. salt
1/4-1/2  tsp. vanilla
Cinnamon to taste

Top with pure maple syrup.

I used Brownberry whole wheat bread, toasted for a few minutes first and it 
came out great.
