Thanks to Craig for filling in the last missing piece, and I have the
zip drive working on my Sun. I don't completely understand Matt's
suggestion about attach, so for now I'll just relay what worked for an
individual workstation.

The only real pieces for the release are

1) a new entry in /etc/fstab
2) new devices in /dev/{r}dsk - c0t5d0sX. I did a boot -r with the zip
drive plugged in and they just showed up.

Hardware-wise, for each drive we also need a Mac to SCSI II cable. It
was also labeled PC SCSI II to DB25. The one we got at the Micro Center
is 3 ft long and was $29.95.

More interesting will be the question of how we tell students to use
these things. As root, I ran format to verify the partition table and
add a label to the disk, newfs to create a file system, mount to mount
the filesystem under /mnt, and finally, mkdir & chown to create a
directory writable by me. It would be nice if students did not have to
go through this, but I'll stop here and let people who know more take up
the discussion.
