We've been making extensive use of NAT in our residence buildings (and all across campus' actually).  It is one good tool in your arsenal to protect systems (as well as conserve public address space).  It has been a very positive experience for us.  One thing that does not work very well is tracking down DMCA complaints because very few of them specify a port number which makes it impossible to determine the inside address -- not that I'm shedding many tears about that.
